I’m still alive!

Sorry for the very long lull in posting–it's not for a lack of baking, mind (been baking almost every weekend!), just lack of time. My real work/day job has started (I work as a teacher) and thus I have even less time to blog about all the cupcakes I've baked recently. I actually have several cupcake pictures that have been impatiently waiting to be uploaded. *sigh* But I guess a quick rundown of what I've been baking lately should help motivate me:

  1. two weeks ago, I finally tried baking banana cupcakes. The urge just came to me randomly because there were some bananas slowly turning brown in the fridge, and I figured it wouldn't hurt to try them in a cupcake on their own. i was floored by the taste (frosted with cream cheese frosting and white chocolate chips). They are, in fact, my new favorites. I even want to make them my wedding cake, whenever my wedding will be. seriously! And yes, they are now listed officially in my flavors list, so you can try them out for yourself. 
  2. the weather has been extremely hot and humid lately, which i'm afraid badly affects my chocolate cupcakes (which tend to dry out easily in humidity, for some weird, inexplicable reason. a batch of red velvet cupcakes i made for a couple of orders last weekend were completely horrible. okay, maybe not horrible, but just nowhere near as good as they usually are. argh. and i've a suspicion that my baking soda is getting old as well. argh. i'm hoping that the weather turns more normal soon (although if Al Gore is to be believed, things are going to get worse, and I'm honestly quite inclined to believe him).
  3. I really need some work on my cream cheese frosting, which is really no match to humidity–it gets extremely runny, which never happened in the past. I'm going to try if i can make a meringue base instead to make it more stable.

i guess that's it for now… and i promise to really get some new posts up as soon as i can! thanks to all the people who've visited lately, especially elodie (a friend of mine) and fourdee (a flickr contact of mine).
